Ingredients
4White Fish Fillets {4 - 6 oz. each}{like Cod, Tilapia, or Halibut}
14.5ouncescan Fire Roasted Tomatoesdrained
2tablespoonsChopped Onion
1tablespoonFinely Chopped Fresh Ginger {1 tsp. Ground Ginger can be substituted}
1teaspoonMinced Garlic
1teaspoonJalapeno Peppersfinely chopped
Salt and Pepper to taste
Instructions
Preheat oven 500°F. Tear off four sheets of aluminum foil to hold fish.
Combine Tomatoes, Onion, Ginger, Garlic, and Jalapeno in small bowl. Stir well and set aside.
Season fish to taste with Salt and Pepper.
Then place 1 fish fillet on each piece of foil. Top each fillet with a heaping 1/4 cup of tomato mixture. Seal packets tightly, folding the edges over and place all of them on one baking sheet.
Bake 12 minutes or until fish is cooked through. Serve in foil pouch and enjoy!
