Ingredients
13.25ouncesBetty Crocker French Vanilla Cake Mix{Vanilla can be substituted}
1/3cupMelted Butter{Vegetable or Canola Oil can be substituted}
2largeEggs
3 1/2Packets Spiced Apple Cider Packets
3/4teaspoonGround Cinnamon
1cupKraft Caramel Pieces {about 20 caramels} {an 11 oz. bag will be more than enough}
Instructions
Unwrap caramels, and cut each caramel into 8 tiny pieces {this will make them similar to the size of chocolate chips}
Set 1/2 cup of caramel pieces aside for later.
In large mixing bowl, whisk together Dry Cake Mix, Apple Cider Mix Powder, and Ground Cinnamon, until well combined.
Then add in Butter {or oil} and Eggs, and mix with hand mixer or stand mixer until well combined.
Fold in 1/2 cup of caramel pieces and stir gently with large wooden spoon.
Cover dough and chill in refrigerator for 2 hours.
After dough has chilled, preheat oven to 350 degrees.
Line large baking sheets with parchment paper. {trust me… the parchment will help prevent the caramel pieces from sticking like glue to your cookie sheet} :)
Roll cookie dough into 1 1/2 tablespoon sized rounded balls and transfer to cookie sheet.
Then place a few caramel pieces from the remaining 1/2 cup of caramels on top of each dough ball. {this will ensure a pretty finished cookie}
Bake on center oven rack for 7 - 13 minutes, or until done. {Note: Bake on the shorter end of the time range for non-stick cookie sheets & longer end of the time range for aluminum cookie sheets}
Remove from oven and allow cookies cool on cookie sheet for 2 minutes, then promptly transfer to cooling racks to finish cooling. ENJOY!
Storage Tip: These cookies will stay fresh covered in an air-tight container at room temperature for up to 3 days.
