Ingredients
14.25ozBetty Crocker White Cake Mix
1cup Water
1/2cup Canola Oil or Vegetable Oil
3Egg Whites
2cupsCream Cheese Frosting{Buttercream frosting can be substituted}
10+dropsGreen Food Coloring to tint frosting{Green food coloring gel can be substituted}

Instructions
Add 23 white cupcake liners to cupcake pans, and set aside.
Preheat oven to 375 degrees for aluminum cupcake pan or 350 for nonstick cupcake pan.
In large mixing bowl, mix together cake mix, oil, water, and egg whites until well combined. {about 2 minutes}
Then carefully spoon batter into cupcake liners - about 3 tbsp. each {or 2/3 full}
Bake for 14 - 19 minutes, or until done. Then transfer cupcakes to wire racks to cool completely.
While the cupcakes are baking, go whip up some Cream Cheese Frosting and tint it green with food coloring drops or gel.
Place the frosting in the refrigerator until you’re ready to use, then rewhip just before using.
Once the cupcakes have cooled completely, insert the chilled icing into your pastry bag {or ziploc}, attach the Wilton Grass Tip #233 and Coupler, squeeze a bit out to get out any air bubbles, and you’re ready to frost!
Practice a bit on an ‘experimental’ cupcake first… you’ll get the hang of it in no time! I like to gently press while pulling up to create the 'grass' look. Just remember… grass isn’t perfect, so your cupcakes don’t have to be either!
After you’ve frosted your cupcakes, go grab your Peeps Bunnies and one by one, gently insert a toothpick at the bottom center piece of their body. Ouch! :)
Now, just pop the toothpick down into the center of the grassy cupcake, and you’re done!
