Ingredients
2cupsAll Purpose Flour
3/4cupGranulated Sugar
1 1/2teaspoonsBaking Powder
1/2teaspoonBaking Soda
1largeEgg
1Egg White
1/3cupButter{melted}
1/3cupCranberry-Strawberry Juice{or any other red fruit juice may be substituted}
2teaspoonsGrated Lemon Rind
1 1/2cupsStrawberries{hulled and coarsely chopped}
Instructions
Preheat oven 350 degrees.
Coat 9x5x3-inch nonstick loaf pan with nonstick cooking spray.
In large bowl, mix together Flour, Sugar, Baking Powder, and Baking Soda.
In small bowl, whisk Egg and Egg White. Stir in melted Butter, Juice, and Lemon Rind.
Add wet mixture to Flour mixture, stirring until well combined. Then stir in strawberries. Transfer batter to prepared pan.
Bake 50-60 minutes, or until toothpick inserted in center comes out clean; cover loosely with foil if you notice it is browning too fast while baking.
