Ingredients
1cupPecansfinely ground
4tablespoonsButtermelted
2tablespoonsSugar
16ouncesCream Cheesesoftened
2cupsPlain Greek Yogurt
1tablespoonVanilla Extract
6tablespoonsPowdered Sugar
12ounces.Fresh Raspberrieswashed and dried.
2teaspoonsSugar {Agave Nectar can be substituted}
Instructions
Place ground pecans in a bowl. Add melted butter and sugar, and combine well.
Transfer mixture in bottom of mason jar and pat down.
Place in refrigerator and refrigerate while working on the cheesecake filling.
For the Cheesecake Filling, place Cream Cheese, Yogurt, Vanilla and Powdered Sugar into a mixing bowl and blend until smooth. Scrape down sides and blend a couple more seconds.
Remove crust from refrigerator and add cheesecake filling. Return to refrigerator for 3 or more hours to firm up.
For the Raspberry Sauce, place berries in blender or food processor, add Sugar and puree. Taste, then adjust sweetness to your liking with more Sugar if you'd prefer.
When ready to serve, remove cheesecake from refrigerator and pour the raspberry sauce on to top of the cheesecake. YUM!
