- Brown Beef & Chopped Onions in Olive Oil
- Drain Juices from meat, and set beef/onion mixture aside

Easy Crockpot Chili Recipe
Ingredients
- 1 1/2 pounds Ground Beef
- 3/4 cup chopped Yellow Onion
- 1 tablespoon Olive Oil
- 30 ounces Dark Red Kidney Beans rinsed and drained
- 30 ounces Tomato Sauce
- 4 ounces Green Chilies
- 20 ounces Ro-tel {2 cans, 10 oz. each}
- 1/2 teaspoon Cumin
- 1/2 teaspoon Ground Mustard Powder
- 3 large Garlic Cloves minced
- 1/2 teaspoon Black Pepper
- 1/2 teaspoon Cayenne Pepper
- 1 tablespoon Chili Powder
- 1/2 teaspoon Dried Basil Leaves
- 1/2 teaspoon Salt
Instructions
- Add 1 tbsp. Olive Oil, Beef, and Chopped Onions to frying pan.
- Brown Beef and soften onions in frying pan.
- Drain juices from meat and set beef/onion mixture aside.
- In a small bowl, mix your Chili Powder, Cumin, Mustard Powder, Basil, Cayenne Pepper, Black Pepper and Salt.
- Add all ingredients {except cheese and green onions} to 6 - 7 quart Crockpot and stir well.
- Cook on HIGH for 2 hours, or LOW for 4 hours, stirring every 30 minutes.
- Garnish with grated Cheddar Cheese and chopped Green Onions. ENJOY!

I am wondering if I could divide this chili recipe in half so I could make it in a smaller crockpot? I have one in my camper that is like 3 or 4 qt size. Perfect for my hubby and I with some leftovers or a larger portion. I have a larger crockpot in my home but I didn’t think I would have enough room for a lot of left overs or food due to space.

I tried your chilly last weekend and it was delicious. I have been looking for something that comes close to my mom’s recipe and this was it!! She has been gone almost 18 years and my first bite of this chili, well she came to mind right away. I used it to make over the top chili. Put it in the crock pot for a couple hours then on the smoker with my meat made like a meat loaf over the top on a baking rack and let the juices run into the chili and smoked it for about 2 hours then chopped the meat up into the chili and it was absolutely delicious.

I honestly have not made it this way. You could try adding some extra beans to compensate for the lack of beef, so the chili would not have too much liquid.

Hi Erika ~ this makes a pretty big batch, so a doubled portion wouldn’t really fit well in a crockpot. If you have two crockpots, you could make a batch in each one at the same time, or another idea would be to make one batch in your crockpot and one batch in your instant pot with the following recipe… hope that helps! 🙂
