Chocolate Zucchini Bread Recipe
Ingredients
- 2 cups Shredded Zucchini {I used approx. 4 Zucchinis peeled then shredded}
- 3 eggs
- â…” cup Canola or Vegetable Oil
- 3 tsp. Vanilla
- 3 cups Flour
- 2 cups Sugar
- ½ cup Hershey’s Cocoa Powder
- 1 tsp. Baking Soda
- 1 tsp. Salt
- ½ tsp. Baking Powder
Instructions
- Preheat oven to 325 degrees.
- Beat together in large bowl Sugar, Eggs, Oil, and Vanilla.
- Stir in Shredded Zucchini and mix with a spoon until well combined.
- In separate large bowl, mix together Flour, Cocoa Powder, Salt, Baking Soda, and Baking Powder.
- Gradually pour dry mixture into wet mixture, and stir well until all combined.
- Spray 2 loaf pans with Non-stick cooking spray, then divide mixture equally into loaf pans.
- Bake for approx. 55 minutes, or until toothpick inserted in center comes out clean.
- Remove loaves from pans, cool on Wire Racks, and ENJOY!
