Mexican Chicken Casserole Recipe
Ingredients
- 2 cups Cooked Chicken cubed {Rotisserie Chicken can be used}
- 1.5 cups Cooked White Rice
- 16 oz. Pace Chunky Salsa {1 jar}
- 15 oz. Black Beans drained & rinsed {1 can}
- 2 cups Shredded Pepper Jack Cheese
- 1 tsp. Chili Powder
Instructions
- Preheat oven to 350 degrees.
- Spray 9×13 casserole dish with Nonstick Cooking spray.
- Combine Chicken, Rice, Salsa, Beans, Chili Powder and 1 cup of Cheese in large bowl and stir well.
- Transfer mixture into casserole dish, and sprinkle top with remaining 1 cup of Cheese.
- Cover with foil and Bake for 25 minutes.
- Remove foil at end, and bake for 10 more minutes.
- Serve topped with Sour Cream, Guacamole & Salsa. ENJOY!
