It’s STRAWBERRY SEASON in Florida, and today I made a healthy strawberry pie for myself and hubby!  He didn’t even realize it was low-fat and sugar-free!

Ingredients:

• 3 Cups Fresh Strawberries
• 1 Small Package {approx. 2 ounces} Sugar-Free Cook & Serve Vanilla Pudding Mix
• 1 Large Package {approx. 6 ounces} Sugar-Free Flavored Gelatin
• 2 Cups Water
• Light or Low-Fat Whipped Topping {optional}

Directions:

• Rinse and hull strawberries.
• Distribute evenly in a 10-inch pan.
• In a medium sauce pan, combine Pudding Mix, Gelatin Mix, and add Water.
• Stir well and bring to a full boil.
• Pour mixture over strawberries.
• Refrigerate immediately for 4 – 6 hours.

Top with light or low-fat frozen whipped topping, and top with a few fresh strawberries if desired!

Hi Everyone! I’m Taryn from Design, Dining + Diapers, a place where I blog about crafts, DIY projects, home decor and gluten-free recipes!

I am thrilled to be visiting The Frugal Girls today. Heidi is such a sweetheart and all of YOU are amazing.

About 2.5 years ago, I found out I was gluten-intolerant, egg-intolerant AND soy-intolerant.

Boy, what a lifestyle change! Even though I was so thankful to finally feel healthy, I was devastated at the thought of never having freshly baked cookies or piece of chocolate cake again. Once I adjusted to my new eating habits, I made it my goal to learn how to bake for myself again and not only make something edible, but make something that tasted DELICIOUS.

Trust me, I’ve eaten a lot of not-so-good gluten-free products so I was determined!  I’ve learned a lot over the years and I’m so excited to share with you today my Gluten-Free Red Velvet Mini Cupcakes! Just in time for Valentine’s Day!

Whether you eat gluten-free or bake for someone who is, you won’t want to miss this one.

What you need:

For the cupcakes:

• 2 1/2 cups Gluten-Free All Purpose Flour ( I prefer Bob’s Red Mill )
• 1 1/2 cups oil
• 1 1/2 cups sugar
• 1 cup buttermilk
• 4 1/2 tsp of Ener-G Egg Replacer + 1/4 cup water ( or 3 eggs)
• 2 Tbs. cocoa powder
• 1 tsp. Baking soda
• 1 tsp. Xanthan gum
• 2 tsp. GF Vanilla
• 2 tsp. Apple Cider Vinegar
• 1 oz. Red food coloring
• 1/8 cup water

For the frosting:

• 6 oz Cream cheese
• 1/2 cup butter at room temperature
• 2 Tbs. Buttermilk
• 1 tsp. GF Vanilla
• 2 cups Powdered Sugar

How to make these little bites of heaven:

1. Preheat oven to 350 degrees.

2. Mix oil, sugar, eggs, vinegar, vanilla, food coloring and water together.

3. In a separate bowl sift dry ingredients together, then slowly add it to the wet mixture.

4. Nest, place the cupcake liners into the tray and fill 3/4 the way full.

5. Bake for 15 minutes or until you can pull a toothpick out and it stays clean.

6. While cupcakes are cooling make the cream cheese frosting.

7. Using a hand mixer, blend the cream cheese, butter, vanilla and buttermilk together until smooth.

8. Slowly add the powdered sugar into the mixture.

9. Put the frosting into a plastic bag that seals and then cut one of the corners off to create a decorating tip (or use a piping bag if you have one).

10. Apply the frosting to the cupcake in a circular motion (if you choose to do the decorative frosting, I would double the recipe. If you are just going to apply one layer then you will have plenty)

And because Valentine’s Day is just around the corner, here is an easy way to dress them up for the special occasion.

I went to the dollar store and found these cute cupcake liners, I got 100 for $1. I also found these adorable heart stickers and thought they would make cute cupcake toppers. To make them, I simply put two heart stickers back to back and placed the toothpick in the middle.

So easy, inexpensive and just added a whole new look to the cupcakes.

These red velvet mini cupcakes would make a great addition to a Valentine’s Day party or gathering. They are the perfect bite size dessert.

In this first card… you can see how the original shot was taken with balloons. To create a 3-D effect, the balloons were simply covered with a chocolate candy heart that was glued on ~ how cute is that?!?

In this second example, I love the depth and reaching effect… and just want to reach back out and grab those lollipops!

Here’s what you’ll do:

• Simply have your kiddo {or other willing subject} stick their arm out in a fist.
• Make the fist and hand your focus point of the picture
• Have your photos printed with a photo deal {these were printed 2×3 size} ~ or you could also use this deal for 20 Free Cards from SeeHere!
• Use an Xacto knife to cut a small slit at the top and bottom of the hand
• Insert your lollipop {these pretty, swirly heart ones came from Wal-Mart}
• There you have it… easy and so seriously CUTE!

I wanted to teach Bradley about Valentine’s Day and celebrate in a fun way. I am not a crafty person. I am much more comfortable in the kitchen with a good, solid recipe, like My Favorite Mint Chocolate Chip Cookies Ever. However, as my mother once told me, sometimes we do things that make us uncomfortable because it’s good for our kids. c-: So I channeled my inner Martha Stewart to make a simple and frugal Valentine’s Day Countdown.

I bought three sheets of scrapbook paper, plus I used some supplies I already had on hand, like my computer/printer, scissors, and glue. That’s it!

I made a pocket on the front of a piece of scrapbook paper and printed out strips of paper that had ideas for each day of the countdown. I glued a heart at the top of each strip of paper, along with a number. Then I decorated the front of the pocket with a few hearts and pretty writing. Each day, Bradley can pull out an activity from the pocket.

Here are my ideas:

• February 1 – Bake a special Valentine’s Day treat for Dada.
  Ideas: Sweetheart Cherry Cake, Valentine Confetti, Cinnamon Candy Cider, Heart-Shaped Meatloaf, Valentine Pizza

• February 2 – Treasure hunt! Search for candy hearts around the house.

• February 3 – Make a Valentine’s Day Tootsie Pop Flower for cousins.

• February 4 – Read Winnie the Pooh’s Valentine from the library.
  
  

• February 5 – Eat a heart-shaped piece of Dove dark chocolate. I might already have this on hand. c-;

• February 6 – Send homemade valentines to grandparents.
  Ideas: Letter Learning Cards, Stick of Gum Valentine, Stained-Glass Hearts
  

• February 7 – Drink hot chocolate with heart-shaped marshmallows.
  Carrie has a great video on how to make homemade marshmallows. Use a heart cookie cutter to make them a little more festive.

• February 8 – Watch Be My Valentine, Charlie Brown from the library.

• February 9 – Make heart-shaped eggs and toast for breakfast with strawberries.
  Or make Heart-Shaped Pancakes. Tip: You can use a condiment bottle to make different shapes. Just thin the batter a bit with milk.

• February 10 – Sing a Valentine’s Day song, like “Just for You.”

• February 11 – Color a Valentine’s Day coloring sheet.

• February 12 – Make a Valentine’s Day music box for free at Lowe’s.

• February 13 – Make a Valentine’s Day craft.
  Ideas: Valentine’s Day Garland, Valentine’s Day Hair Clips, Hand Valentines, Crayon Heart Pencil Toppers
  

• February 14 – Play a Valentine’s Day memory match game.

BONUS IDEAS: You can also make a list of why you love your children, take them on a winter picnic, or write a silly Valentine’s Day poem together. Be sure to include lots of snuggles and kisses throughout!

Gifts in a jar are simple to make, and always fun to receive!

A few weeks ago I shared this Layered M&M Gifts in a Jar idea…

Well… several of you also shared another fun idea ~ Valentine’s Day kisses in a jar!

Simply fill a jar with Hershey’s Kisses, then decorate the lid!  For one lid, I used this fun heart ribbon…

For the lid, simply cut a circle of scrapbook paper and attach to the lid with double stick tape {I used a sparkly, glittery silver paper, and fuzzy wildness red-wired ribbon on this lid… because hey ~ why not?!?}

And yes… the foam hearts and heart ribbons were the same ones I used to make these thrifty Valentine’s Day Hair Clips…

On the hunt for another fun twist on Valentine’s Day Candy??

Frugal friend Kathy emailed this picture over of these adorable Valentine’s Day Tootsie Pop Flowers that she made!

“I made these for my daughters to bring to school. I like them better than cards, and they’re simple to make!”

Here’s what you’ll do:

• Cut out uniform size heart shapes from foam sheets
• Use a hole puncher to make a hole near the bottom of each heart
• Stick the lollipop through
• Print or write a message on green paper, and fasten around the lollipop stick… to look like a leaf!
• One fun message idea Kathy used was…   ‘If friends were flowers, I’d pick you!’

You’ll just need some wooden hearts {from the craft store}, pretty scrapbook paper, mod podge, some stamps… and you’re on your way to a sweet set of Love Notes that can be scattered around your home… in his lunch box… in the car… on his pillow, etc!

On the hunt for a fun and downright adorable gift?

Frugal friend Kathy made this bouquet of Rose Frosting Cupcakes as a gift for her neighbor ~ aren’t they gorgeous??

Guess what ~ she shared her tips and tricks, so you can make some too!

What You’ll Need:

• Mini Cupcakes {bake, then let cool completely}
• Buttercream Frosting {Timesaver Tip: purchase this directly from your local bakery, or the bakery in your grocery store!}
• Pastry Bag with Coupler and Rose Tip
• Decorative Container
• Floral Foam Piece
• Wooden Skewers {just like the ones we used for the 4th of July Fruit Kabobs}
• Optional: Rose / Flower Nail {similar to a pedestal} and Waxed Paper Squares used to make roses

What You’ll Do:

• Insert floral foam piece into your decorative container
• Frost cupcakes like a rose {watch a step-by-step rose tutorial video or check out these step-by-step photos from Wilton}
• You can either frost on a rose nail first {like in the video}… or just frost directly onto the cupcake.
• Tip: If piping directly onto the cupcake, frost the cupcake first, then immediately pipe the flower onto the frosting before it sets.  The flower will stick better to ‘wet’ frosting.
• Practice a bit and have fun ~ you’ll get the hang of it!
• Once frosting flowers have dried, attach cupcakes to wooden skewers
• Then carefully press wooden skewers into floral foam piece
• All done ~ and 110% gorgeous!!
• These would make great Valentine’s Day Gifts, Mother’s Day Gifts, or…. any day gifts!

You see… I live in a man’s world.  It’s true ~ I’ve got an awesome hubby and 2 silly boys that I adore, but Valentine’s Day means I’ve got an excuse for all things girly… hearts and love-dovey things and all shades of PINK!!
